Back in my university days, there was a little restaurant around the corner that became a second home for me and my friends.
The owner, a warm-hearted Palestinian gentleman, always welcomed us with a table full of mezze and stories from his home. His tzatziki also had a twist! Extra garlic and a sprinkle of fresh mint that made it unforgettable.

Prepare the Cucumber: Grate the cucumber and squeeze out any excess water with a paper towel or a clean cloth to prevent the tzatziki from becoming watery
Mix the Ingredients: In a medium sized bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, olive oil, and lemon juice
Season to Taste: Add salt and pepper to taste, and stir until all ingredients are well blended
Chill and Serve: For the best flavour, chill the tzatziki in the fridge for at least 30 minutes before serving
Enjoy: Serve with pita bread, fresh veggies, or as a side to grilled meats

For a thicker, creamier tzatziki, use full-fat Greek yogurt and let it chill for longer. You can also add extra dill or a sprinkle of chopped mint for a fresher twist.
