Date cake

So, we thought

"Why not make dates more exciting?"

This cake would weigh around 800 grams

Perfect for your dinner party or kids' birthday parties!

And we curated this 

 Ingredients
Chopped Dates 2 cups
Baking soda 1 tablespoon
All-purpose flour 1.5 cups
Vegetable Oil 1 cup
Vanilla extract 2 teaspoons
Chopped Walnuts Optional, depends on taste
Chopped Cashew
Optional, depends on taste
For the sauce (optional)
Butter 1 cup 
Cream 1 cup
Brown Sugar 1 cup 

Stage 1: Preparation

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan.

  2. Heat milk and add dates. Ideally, let the mixture soak overnight in the fridge.

  3. In another bowl, sift together the flour and baking powder.

  4. Add chopped walnuts, cashew and the vanilla extract to the the soaked dates

  5. MIx everything together to create a batter

Stage 2: Baking

  1. Pour the batter into the baking pan

  2. Heat milk and add dates. Ideally, let the mixture soak overnight in the fridge

  3. Pour the batter into the baking pan
  4. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Once the cake is baked, remove it from the oven and let it cool in the pan for a few minutes.

  6. Then, if using the sauce, poke holes in the cake with a skewer or fork and pour the warm sauce over the top, allowing it to soak into the cake.    

Stage 3: Preparing ths sauce (optional)

Only do this if you are feeling SUPER fancy

  1. In a saucepan, melt the butter over medium heat.
  2. Stir in the brown sugar and heavy cream.
  3. Bring the mixture to a gentle boil, stirring constantly, and cook for about 2 minutes until slightly thickened. Remove from heat and let it cool slightly.

TOP TIP: Make the sauce while the cake bakes to save time 

 

Serve the date cake warm with whipped cream, if desired. Enjoy!
