So, as a thank you, we got another middle eastern salad for you!
Well, to be specific, this nourishing delight is from the Levant.
Eat it as a side dish. Or turn into a light meal.
Spoiler alert: It will cost you less than £2 to make
We want you to enjoy middle eastern foods that don’t drain your physical and financial health.
And did we mention, this Levantine dish is SUPER easy to make!

Part 1- Prepare the salad:
- Chop all the vegetables
- Mix all the vegetables.
Yes, it really is that easy!
Part 2- Make the dressing:
Whisk together the olive oil, lemon juice, minced garlic, sumac, salt, and black pepper until well combined.
And your dressing is done!
Part 3- Prepare the crispy pita:
You really don’t have to do this. Only do it if you’re feeling fancy.
- Preheat your oven to 375°F (190°C)
- Cut the pita bread into bite-sized pieces.
- In a small bowl, toss the pita pieces with olive oil, sumac, and salt until evenly coated.
- Spread the seasoned pita pieces in a single layer on a baking sheet.
- Bake in the preheated oven for 10-12 minutes, or until the pita pieces are golden brown and crispy. Make sure Keep an eye on them to prevent burning.
- Remove from the oven and let cool slightly.
Part 4- Assemble the fattoush:
- Just before serving, drizzle the dressing over the salad and toss gently to coat.
- Add the crispy pita pieces to the salad and toss again to combine.
- Taste and adjust seasoning if needed.
- Serve immediately, as the pita pieces will become soggy if left in the salad for too long.
We suggest you skip this part if you want to store the salad for later. The bread will go soggy in the fridge!

You can garnish the fattoush with additional sumac and fresh herbs before serving for extra flavour and presentation. If you’ve ever been to the Levant, you know that they love their sumac!
This dish from the Levant is easier than riding a bike! And the best part is, you get to choose how fancy you want to make it!
This is a bit unconventional. But for meat-lovers, you could add some grilled minced beef or chicken to the salad.
