Turn a superfood into a super tasty snack!

Why don’t you make a couscous salad?
Spoiler alert: It costs £3 per serving (Yes, we did the maths!)
The ingredients you will need (serves 2 people):

For the dressing |

How to prepare it?
- Boil the vegetable stock
- Mix the boiling stock with the couscous
- Cover the couscous and leave it for 2 minutes
- Meanwhile, pour all the dressing ingredients into a bowl
- Add chickpeas and half the dressing to the couscous (mix well)
- Heat 2 tablespoons of olive oil over a pan and cook the tomatoes, courgettes and halloumi
- Add the cooked tomatoes, courgettes and halloumi to the couscous
- Finally, add the rest of the dressing to the couscous
And you’re done!
This entire process takes less than 30 minutes.
